Join Vancouver Island University's Culinary and Hospitality Management students for this spectacular festive banquet style event. This is a unique opportunity to celebrate the season with friends, clients or colleagues while contributing to a one-of-a-kind educational opportunity for our students.

The evening begins at 5:30pm with reception style canapes followed by a 3-course plated dinner at 6:45pm. Finish with a seasonally inspired dessert buffet and lively classic rock and 80s inspired music spun by Sid Bumatay of Rock & Role DJ Services.

The Menu
Reception Style Canapes (5:30 to 6:30pm)
Roasted Onion Cappuccino - dark bitter chocolate foam

Flambéed Black Tiger Prawn - compressed watermelon infused with fennel and sherry

Salmon & Shrimp Cakes - pea shoot and radish salad, wasabi and beet aioli

Tuna Tataki - wonton crisps, pickled daikon and wasabi pea dust

3-Course Plated Dinner (6:45pm)
complemented with assorted breads with seasonal cream cheese spreads

House Cured Salmon - rosehip purée and artisanal greens

Smokey Eggplant & Tomato Soup

Sous Vide Turkey Breast - alder smoked bacon, chanterelle mushrooms, wild rice, winter squash stack and cracklin’ crisp kale

Location: Hosted in the main cafeteria - building 300 (limited to 250 guests)

Dress: Smart-to-business casual

Bar Service: Beer, Wine and non-alcoholic beverages will available with payment by debit or credit card. Alternatively, bring your own bottle of wine for $10 per bottle corkage.

Pay Parking: Lots E, F, & G are recommended. Ticket dispensers accept cash and credit cards.

Groups & Seating: We can sit groups of 8 or more people together. If purchasing tickets separately, please let us know the names of other attendees who you would like to sit with as seating will be assigned. If your party is more than 12 people, you will be accommodated at two or more adjacent tables. Parties smaller than 8 people will be sat with other guests.
